USP Food Protein Workshop—Developing a Toolbox of Analytical Solutions to Address Adulteration
During this two-day event, leading domestic and international scientists from the food industry, academia, governments, and trade associations explored which tools work best to measure food protein. Discussions focused on emerging ways to move protein measurement techniques beyond existing total nitrogen-based approaches for the foods.
Topics:
- Melamine adulteration; recent case studies regarding milk products
- Challenges and opportunities for a food protein measurement paradigm shift that takes
into account the needs of industry, consumers, and regulators - Available analytical techniques, current or in-development, to address the unique needs
for individual food matrices and supply chain points. - How reference standards can best be used to ensure accurate and reproducible protein measurements
- Collaborations and consensus on objectives to move the project forward
